Perfection is no stranger in the world of Chef Jessie Sincioco. The diminutive chef who started her career in baking has long ago found her way to the kitchen. She made her mark in Le Souffle then continued to reap recognition with Chef Jessie Rockwell Club and Top of the Citi by Chef Jessie. Both restaurants are now thriving businesses under Chef Jessie’s very own JCS Gastronomie Inc.
Her culinary passion has found another home at 100 Revolving Restaurant, the country’s only revolving restaurant located on the 33rd Eastwood Drive and C5 Road. The restaurant revolves 360 degrees in approximately one hour and forty minutes. It’s perfect time for an awesome meal.
Breathtaking is the only word that can describe the view from the restaurant. On a clear day, it provides an almost unobstructed 360 degree sweep of Metro Manila with clear glimpses of Manila Bay on one side and the Sierra Madre mountains on the other. One can also see birds fly just outside the window pane.
Chef Jessie’s love for Filipino cookery is also evident. Thus, some menu offerings show the happy marriage of European techniques and local ingredients.
One unique example is Balut Surprise by Chef Jessie, a consommé with a puff pastry crust. Inside, nestled in a soup with celery, carrots, spring onions and cabbage is a whole balut or fertilized duck egg.
The green leaves and red stems of the lowly alugbati are celebrated in Alugbati Salad with micro arugula and crispy danggit in tamarind vinaigrette dressing. It shares top billing with Smoked Salmon Caviar Pie.
For those who look for something Japanese, the restaurant offers hand rolled maki like the visually arresting Dragon Maki that consists of shrimp tempura, cucumber,kampyo and black sesame seeds. Viewed at an angle, the dish resembles the undulating form of a dragon. The main course offerings include prime steak, beef, pork, lamb, chicken and seafood.
The steak lovers will love the US Black Angus Beef selection of tenderloin, rib eye and fillet mignon plus a US Black Angus Burger with Foie Gras. For something different, one can try the Pan Fried Goose Liver Salad.
The Beef Roulade offers a complex mixture of flavors with its rich filling of chorizo, egg, capsicum, cheese, gherkin and carrots. Not to be outdone is our very own Bistek made with thin slices of high grade sirloin topped generously with caramelized onion. The sweet, tangy marinade of the Charcoal Grilled Baby Back Ribs goes well with a side of either rice or potato. Lamb is presented two ways, as a Charcoal Grilled Kebab or the quintessential Lamb Chops. Both are excellent choices for someone looking for meat other than the usual beef or pork.
The select menu line up also pays tribute to the Filipino classic Chicken Adobo, but this time cooked in Creamy Coconut Sauce with Pickled Raw Papaya. Chicken Teriyaki with Roasted Vegetable Jardinière and Chicken Cordon Bleu round up the poultry offerings. The seafood options are plentiful with Assorted Seafood Gambas, Grilled Salmon in Leek and Mushroom Sauce, Grilled Lapu-Lapu in Berlinoisse Sauce, Lapu-
Lapu Cordon Bleu in Lemon Butter Sauce and for a distinct Asian flair, there is the Tiger Prawns in Curry Sauce with Turmeric Rice. The pasta selection is varied with seafood, chicken, beef and even vegetarian options. A crowd pleaser is Pasta ala Chef Jessie with Scallops, Prawns, Asparagus, Sun-Dried
Tomatoes and Mushroom. You can be extravagant and order your choice of pasta Ala Crème with Mushrooms and a topping of truffles. Another exclusive menu entry is Wild and Brown Rice Risotto with different variations of either vegetable, chicken, seafood, prawns or beef.
The pizza selection does not disappoint. Try the Pinoy Pizza with paper thin crust topped with sisig, longganisa, adobo, tomato and kesong puti. Meditteranean is for the vegetable lover with grilled capsicum, onions, mushrooms, aubergine, courgette and olives. Smoked Salmon and Organic Arugula is also well recommended. If by now you still do not know what to order, you can sample the Surf and Turf.
This premium burger with grilled beef patties and seafood cake comes along with the requisite cucumber, horseradish, homemade mayonnaise, mustard, lettuce, tomatoes and onion. Other options include Mushroom Burger, Tuna Melt and Chicken Teriyaki.
For the truly undecided diner, the restaurant has a solution. It offers Trio of Mini Sandwiches with any three choices of Adobo Flakes, Kesong Puti, Tuna, Grilled Beef, Egg Salad or Ham.
Of course, a Chef Jessie restaurant cannot be without any dessert. The lady, anyway is a pastry expert first and foremost.
For 100 Revolving Restaurant, she lovingly created what she termed RevolvingTortas, moist butter cake baked in mini bundt pan topped with a choice of macapuno,jackfruit, mango or banana glazed right before serving.
With Chef Jessie in the house, soufflé cannot also be far behind. The menu of 100 Revolving Restaurant serves dessert soufflé of various flavors-white chocolate, dark chocolate, vanilla, strawberry, pistachio, orange, mango, banana, caramel and even a soufflé of Grand Marnier.
Chef Jessie’s culinary journey has taken her to different parts of the world and afforded her the chance to bring her inherent talent to levels unsurpassed. Far from resting on her laurels, she continues to take on any challenge that comes her way.
